Why This Works

The air fryer's convection heat creates a beautifully golden crust in a fraction of the time of a conventional oven. The lower temperature (310°F vs. the typical 350°F oven) allows the interior to cook through before the exterior overbrowns, especially with the foil tent technique.

My Recipe Testing Notes

The challenge with air fryer banana bread is that the top browns much faster than the inside cooks. I tested 300°F, 310°F, and 325°F. At 325°F the top was burnt before the center was done. At 310°F with a foil tent after 20 minutes, the bread came out perfectly — golden crust, moist interior, fully cooked center. A round cake pan (7-inch) works better than a loaf pan in most air fryers because the round shape allows more even air circulation.

3 medium Very ripe bananas

⅓ cup Unsalted butter, melted
¾ cup Granulated sugar
1 Egg, beaten
1 tsp Vanilla extract
1 tsp Baking soda
pinch Salt
1½ cups All-purpose flour
½ cup Chocolate chips or walnuts

In a large bowl, mash the ripe bananas with a fork until smooth. A few small lumps are fine.

Stir melted butter into mashed bananas. Mix in sugar, beaten egg, and vanilla.

Sprinkle baking soda and salt over the mixture and stir. Fold in flour until just combined — do not overmix. Fold in chocolate chips or walnuts if using.

Grease a 7-inch round cake pan that fits in your air fryer. Pour in the batter and smooth the top.

Air fry at 310°F for 30-38 minutes. After 20 minutes, loosely tent the top with foil if it's browning too quickly.
