Why This Works

The air fryer's convection heat crisps the outside of the flour tortilla while the trapped heat inside finishes cooking the filling. The result is a burrito with a shatteringly crispy exterior and a hot, melty interior — something you simply can't achieve in a microwave.

My Recipe Testing Notes

The air fryer is the best tool for reheating frozen breakfast burritos — it crisps the tortilla while heating the filling all the way through, something a microwave can never do. But fresh burritos are even better. The key to a non-soggy burrito: don't overfill, and make sure the scrambled eggs are slightly undercooked before rolling (they'll finish cooking in the air fryer). I also found that brushing the outside of the tortilla with a tiny bit of oil before air frying gives you a dramatically crispier exterior.

Ingredients

4 Large flour tortillas (10-inch)
6, scrambled until just set Large eggs
6 strips Cooked bacon, crumbled
1 cup Sharp cheddar cheese, shredded
1/2 cup Bell pepper, diced small
1/4 cup Onion, diced small
1 tbsp Olive oil

For brushing the outside of the tortilla

to taste Salt and pepper
for serving Salsa and sour cream

Instructions

1

Scramble eggs in a pan until just barely set — slightly underdone. Season with salt and pepper. Set aside.

2

Warm tortillas briefly in the microwave (30 seconds) to make them pliable.

3

Lay a tortilla flat. Add a line of eggs, bacon, cheese, bell pepper, and onion down the center, leaving 2 inches on each side.

4

Fold in the sides, then roll tightly from the bottom. Place seam-side down. Brush the outside lightly with olive oil.

5

Preheat air fryer to 375°F. Place burritos seam-side down in the basket.

6

Air fry at 375°F for 6-8 minutes until the outside is golden and crispy. No flipping needed.

7

Serve immediately with salsa and sour cream, or let cool and freeze for meal prep.

Frequently Asked Questions

How do I reheat a frozen breakfast burrito in the air fryer?

From frozen: air fry at 350°F for 12-15 minutes, flipping halfway. From refrigerated: 375°F for 6-8 minutes. The air fryer gives you a crispy exterior that a microwave can never replicate.

How do I keep my breakfast burrito from falling apart?

Three tips: (1) don't overfill — leave 2 inches on each side, (2) warm the tortilla first to make it pliable, and (3) place the burrito seam-side down in the air fryer so the heat seals it shut.

Can I make these ahead and freeze?

Yes — this is one of the best meal prep recipes. Make a batch of 8-10 burritos, wrap individually in foil, and freeze. They last up to 3 months. Reheat from frozen in the air fryer at 350°F for 12-15 minutes.
