Why This Works
Panko breadcrumbs are larger and drier than regular breadcrumbs, which means they have more surface area to crisp up and absorb less oil. The flour layer helps the egg adhere, and the egg acts as glue for the panko. A light spray of oil on the outside of the breading allows the air fryer to brown the panko through the Maillard reaction.

Pat chicken tenders dry with paper towels.
Dredge each tender in flour (shake off excess), then dip in egg (let excess drip off), then press firmly into the panko mixture.
Place breaded tenders on a plate. Spray both sides generously with avocado oil spray.
Arrange in a single layer in the air fryer basket. Do not overlap.
Cook at 400°F for 6 minutes, flip, spray the other side with oil, and cook for another 6 minutes.
Internal temperature should reach 165°F. Serve immediately with dipping sauces.
