Why This Works

The air fryer's intense heat creates a Maillard-browned crust on the lamb quickly, sealing in the juices. The circulating air cooks the interior evenly without the need for constant attention, making it easier to achieve a consistent medium-rare than pan-searing.

My Recipe Testing Notes

Lamb chops in the air fryer are a revelation — you get a restaurant-quality sear in a fraction of the time. I tested loin chops and rib chops. Loin chops (thicker) need 12-14 minutes at 400°F for medium-rare (145°F). Rib chops (thinner) need only 8-10 minutes. The herb crust of rosemary, garlic, and thyme is the classic pairing for lamb.

Ingredients

4 (about 1 inch thick) Lamb loin chops
1 tbsp Olive oil
3 cloves, minced Garlic
1 tbsp, minced Fresh rosemary
1 tsp Fresh thyme
1 tsp Salt
1/2 tsp Black pepper
For serving Mint jelly or tzatziki

Instructions

1

Mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub all over the lamb chops.

2

Let marinate at room temperature for 15 minutes (or up to 24 hours in the fridge).

3

Place in air fryer basket in a single layer.

4

Air fry at 400°F for 6 minutes, flip, then cook 5-6 more minutes for medium-rare (145°F internal).

5

Rest for 3 minutes before serving. Serve with mint jelly or tzatziki.

Frequently Asked Questions

What temperature for lamb chops in air fryer?

400°F for 12-14 minutes (loin chops) or 8-10 minutes (rib chops) for medium-rare (145°F). Add 2-3 minutes for medium (160°F). Always use a thermometer.

How do I know when lamb chops are done?

Use a meat thermometer: 145°F is medium-rare, 160°F is medium. Lamb is best served medium-rare to medium — well-done lamb becomes tough and loses its distinctive flavor.

Can I use frozen lamb chops?

Thaw completely first for best results. Frozen lamb chops will release too much moisture and won't develop a proper crust.
