Why This Works

Soaking removes surface starch that would otherwise create a gummy coating. The air fryer's rapid convection then evaporates any remaining moisture instantly, allowing the Maillard reaction to create those golden, crispy edges that are difficult to achieve in a conventional oven at the same speed.

My Recipe Testing Notes

I tested Yukon Gold, Russet, and baby potatoes. Baby potatoes (halved) win for convenience and texture — they have a naturally buttery flavor and the cut sides get beautifully golden. The secret to maximum crispiness is soaking the cut potatoes in cold water for 15 minutes to remove excess starch, then drying them thoroughly. This extra step makes a noticeable difference in crispiness.

Ingredients

1.5 lbs Baby potatoes or Yukon Gold

Halved — uniform size ensures even cooking

2 tbsp Olive oil
1 tsp Garlic powder
1 tsp Dried rosemary
1/2 tsp Smoked paprika
1 tsp Salt
1/2 tsp Black pepper
2 tbsp, chopped Fresh parsley

For garnish after cooking

Instructions

1

Halve the potatoes and soak in cold water for 15 minutes. Drain and pat completely dry.

2

Toss with olive oil, garlic powder, rosemary, smoked paprika, salt, and pepper until evenly coated.

3

Place in air fryer basket cut-side down in a single layer. Slight overlapping is okay but avoid thick piles.

4

Air fry at 400°F for 18-22 minutes, shaking the basket at the halfway point.

5

Potatoes are done when golden-brown and a fork slides in easily. Garnish with fresh parsley and serve immediately.

Frequently Asked Questions

How long to cook potatoes in air fryer?

Halved baby potatoes take 18-22 minutes at 400°F. Cubed potatoes (1-inch pieces) take 15-18 minutes. Always shake the basket halfway through for even browning.

Why are my air fryer potatoes not crispy?

The most common causes: not drying the potatoes thoroughly after soaking, using too much oil (which steams them), or overcrowding the basket. Leave space between pieces for air circulation.

Can I use frozen potatoes?

Yes! Frozen diced potatoes work well — cook at 400°F for 20-25 minutes from frozen, shaking every 8 minutes. No need to thaw or add oil since they're usually pre-coated.
