Why This Works

Tofu is essentially a water-protein matrix. Pressing removes the water, which allows the protein to brown and crisp under high heat. The air fryer's circulating heat reaches all sides of each cube simultaneously, creating the even golden crust that's difficult to achieve in a pan.

My Recipe Testing Notes

The secret to crispy tofu is pressing out as much moisture as possible before cooking. I press mine for 30 minutes under a heavy pan. Extra-firm tofu is non-negotiable — silken or firm tofu won't crisp up. At 400°F for 18-20 minutes, shaking every 5 minutes, you get a golden crust on every side without any oil spray needed.

Ingredients

1 block (14 oz) Extra-firm tofu

Press for at least 30 minutes — this step is essential

2 tbsp Soy sauce
1 tbsp Sesame oil
1/2 tsp Garlic powder
1 tbsp Cornstarch

Instructions

Press tofu for 30 minutes using a tofu press or by wrapping in towels and placing under a heavy pan.

Cut into 1-inch cubes. Toss with soy sauce, sesame oil, and garlic powder. Let marinate 10 minutes.

Drain excess marinade and toss with cornstarch until evenly coated.

Place in air fryer basket in a single layer.

Air fry at 400°F for 18-20 minutes, shaking every 5 minutes, until golden and crispy on all sides.
