Why This Works
Starting breast-side down allows the juices to baste the breast meat during the initial cook, preventing the lean white meat from drying out. The flip at the end exposes the breast skin to direct heat for maximum crispiness.
My Recipe Testing Notes
A whole chicken in the air fryer requires a basket large enough to fit it — I recommend a 5.8-quart or larger. The key is cooking breast-side down for the first 30 minutes, then flipping breast-side up for the final 20 minutes. This keeps the breast meat moist while the skin on top gets golden and crispy. A 3.5-4 lb chicken is the sweet spot for most air fryers.
Ingredients
Pat completely dry inside and out
Instructions
Pat chicken completely dry inside and out. Mix softened butter with minced garlic, paprika, garlic powder, salt, and pepper.
Rub butter mixture all over the chicken, including under the skin on the breast.
Tuck rosemary sprigs inside the cavity.
Place breast-side DOWN in the air fryer basket. Cook at 360°F for 30 minutes.
Carefully flip breast-side UP. Cook at 380°F for another 18-22 minutes until skin is golden and internal temperature reaches 165°F at the thickest part of the thigh.
Let rest 10 minutes before carving.
Frequently Asked Questions
What size air fryer do I need for a whole chicken?
You need at least a 5.8-quart air fryer for a 3.5-4 lb chicken. Larger chickens (5+ lbs) may not fit. Measure your basket before buying a chicken.
How do I know when the whole chicken is done?
The internal temperature must reach 165°F at the thickest part of the thigh, away from the bone. The juices should run clear when you pierce the thigh.
Can I stuff the chicken?
I don't recommend stuffing a whole chicken in the air fryer — the stuffing won't reach a safe temperature (165°F) before the chicken is done. Cook stuffing separately.
