Why This Works
Frozen fries are already par-cooked and coated in a thin layer of oil from the factory. The air fryer's convection heat reactivates that oil coating and crisps the exterior rapidly, while the steam from the frozen interior keeps the inside fluffy. It's essentially the same physics as a commercial deep fryer, minus the quart of oil.
My Recipe Testing Notes
I tested five different brands of frozen fries (Ore-Ida, McCain, Alexia, store brand, and sweet potato fries) and the cooking times varied by up to 3 minutes. Thin-cut fries (like shoestring) need only 12 minutes at 400°F, while thick-cut steak fries need a full 18 minutes. The single most important tip: shake the basket at the halfway mark. Fries that sit in one position the entire time will have one crispy side and one soggy side.

Pour frozen fries into the air fryer basket. Do not thaw. Fill to about 2/3 capacity — overcrowding is the #1 mistake people make.

Frequently Asked Questions
Why are my fries still soggy?
The #1 cause is overcrowding. If fries are piled on top of each other, steam gets trapped and they steam instead of fry. Use no more than 2/3 basket capacity and shake halfway through.
Should I add oil?
Most frozen fries already have oil on them from the factory. Adding more is optional but can help with extra crispiness. A very light spritz of avocado oil spray is all you need.
What about sweet potato fries?
Sweet potato fries need a slightly lower temperature (380°F) and longer time (16-20 minutes). They also benefit from a light oil spray since they tend to be drier than regular fries.
